Coconut Muffins1/2 cup shortening 1 cup granulated sugar 2 eggs 1 1/2 cups flour 2 teaspoons baking powder Dash of salt 3/4 cup milk 1 teaspoon vanilla extract 1 (3 1/2 ounce) can flaked coconut Cream together shortening and sugar. Add eggs and mix. Mix together flour, baking powder and salt; add to shortening mixture alternating with milk. Add vanilla extract and coconut. Mix well. Pour into miniature muffin pans. Bake at 400 degrees F for 6 to 10 minutes until lightly browned. Makes 48.
