Carrot Marshmallow Salad3 1/2 cups peeled, shredded carrots 1 cup miniature marshmallows 1/4 cup pineapple, cut into 1/2-inch pieces 1 cup seedless raisins 1/2 cup shredded coconut 1 cup mayonnaise 1 cup whipped cream Toss lightly carrots, marshmallows, pineapple, raisins and coconut. Combine mayonnaise with carrot mixture. Carefully fold in whipped cream. Garnish with additional coconut, if desired.
