Mock Sour CreamThis is far lower in fat, saturated fat and cholesterol than the real thing, but you'll hardly notice a difference in taste or texture. 1 cup low-fat cottage cheese 2 tablespoons lemon juice 2 tablespoons low-fat mayonnaise 1/4 cup buttermilk Zest of 1/2 lemon Put all the ingredients in a blender or food processor and mix until creamy smooth. Makes 1 1/2 cups.
