Gourmet Toffee MixMakes 31/2 pounds. 1 cup (2 sticks) REAL butter 21/4 cups firmly packed brown sugar (1 pound) 1/2 cup light corn syrup 1 teaspoon vanilla extract 51/2 cups (6 ounces) Crispix cereal 51/2 cups (6 ounces) Rice Chex cereal 7 cups (6 ounces) Corn Chex 1 pound salted mixed nuts Preheat oven to 250 degrees F. Mix butter, brown sugar, corn syrup and vanilla extract in saucepan over medium-high heat. Bring to a boil for 5 minutes. Mix cereals and nuts together in a roasting pan. Pour syrup over mixture. Mix well. Pour into large roasting pan. Bake 1 hour. Spread on wax paper to cool. Break up pieces as needed. Store in an airtight container.
