Chocolate Amaretto Tofu CheesecakeCrust 2 cups graham cracker crumbs 2 tablespoons melted butter or margarine Flatten out crumbs and butter mixture into a pie pan with a fork. Filling 1 pound soft tofu 1/2 cup brown sugar 1/3 cup honey 1/4 cup vegetable oil 1 tablespoon amaretto 1 tablespoon flour Preheat oven to 350 degrees F. In a medium mixing bowl, blend all filling ingredients using an electric mixer. Blend until smooth and full of air bubbles. Pour into pie crust. Bake for one hour or until the top begins to crack.
